cassava cake in a pan

The above image is the cassava cake in a pan which I cooked days ago which I just posted it now. (~_~) Well, as long as the pic is there, no worry. (~_~) To the history of Cacai M.'s Kitchen journey, that was my first time cooking of such. This is one of my fave when it comes to cake, actually my bessy Lyn always made it for me wayback when we're still neighbor in the city where I live now. I want to do it my own and the time I made this she's busy so what I did was just browsed and see the recipe. Well, let's have something to eat, I mean cook first since that one had been eaten already. (~_~) With that, here is my simple recipe taken from here, which I search and read it for about 2 hours from different recipes. I wanted a simple one so I made my own. My simple recipe is this:

Ingredients:
  • 1 pound grated cassava(in a bag sold in Asian or Oriental stores)
  • 1 pound young coconut meat
  • 2/3 of a big can condensed milk
  • 1/3 big can of condensed milk for the topping
  • 1 can evaporated milk (or 1 can coconut milk)
  • sugar if necessary
Procedure:
  1. Grease pan and set aside.
  2. Mix together all the ingredients excluding 1/3 can of condensed milk in another mixing bowl.
  3. Put all the mixed ingredients into pot and heat it up. Mix regularly until about to boil.
  4. Upon heating up the mixed cassava cake ingredients, warm up the oven and set it to 350 degrees Fahrenheit.
  5. When the mixed ingredients about to boil, transfer it directly to greased-up pan and put in the oven for 40 minutes. After 40 minutes, put the other 1/3 can of condensed milk at the top and put it back again at the oven for 20 minutes. And done! Happy eating! (~_~)

Thank you commentators! yep, it's just easy to cook this, but first timer isn't even if you have the recipe .. (~_~).. good luck to you folks.. just a tip, make it simply first then I guess special ingredients if you mastered it already. Well, it don't apply to one recipe, but to me, in all our cooking (for the beginners). And yep, it's only me who ate it, hubby didn't like.. it's his first time.. heheh.. perhaps one day he will like it. Thanks pretties.. have a good day!
